Baker’s Field Flour & Bread in Northeast Minneapolis provides us with 100% naturally leavened breads. Their “stone-cold-milling” process keeps key elements of the whole grain (bran, endosperm, and germ) more intact than flour milled by contemporary roller mills. Additionally, by milling at lower temperatures, the flour retains more naturally occurring vitamins, minerals, and oils.
